Simple ingredients make the best meals. Looking for a quick and easy healthy dessert? I usually try to use what I have in the fridge before going out to the store. Bingo! We had pineapples, mint from the garden and gelato in the freezer. It’s all in how you prepare them.
Follow the steps to this easy dessert. (I used sliced and ready to use fresh pineapples from the grocery store.) Lightly grease heavy grilling pan with corn oil, heat on high until hot, place sliced pineapples on grilling pan. Turn down heat to medium. Continue grilling for 1 minute or until lightly brown.


Turn pineapple slices gently with spatula, continue grilling until light brown and remove from pan. Plate pineapples, add one scoop of lemon gelato, garnish with fresh mint leaves. Enjoy! Supper easy, super fast and delicious! I really like combination of the fresh mint and grilled pineapples.
